• 3/4 cup flour (a GF blend works)
  • 1/4 cup Cricket Power 
  • 1/4 cup of Ground Flaxseed
  • 1/2 cup warm water or milk 
  • 3 tbsp oil 
  • 3 tbsp orange juice 
  • 1/2 cup sugar
  • 1/4 tsp baking soda
  • 1 tsp baking powder 
  • pinch of salt
  • 1 cup cranberries 

Mix the ground flaxseed and water/milk together and set aside to thicken for 10 minutes. mix flour, cricket powder, sugar, baking soda and powder and salt together. Add orange juice and oil to flaxseed mixture. Then mix the wet and dry together, fold in the cranberries and scoop into muffin tins. Bake at 375 (degree symbol) for 15 minutes.
